Cold brew concentrate isn't coffee. It's coffee distilled to its essence. The process strips away the heat shock and bitter oils that regular brewing creates, leaving behind something closer to liquid velvet. Blue Bottle Coffee turned this into science fifteen years ago, but the method dates back to Japanese kissaten culture and Dutch colonial trading routes. Steep coarse grounds in room temperature water for twelve to twenty-four hours. The result concentrates all the caffeine and smooths out the acids.

The ratio matters more than the beans. One part concentrate to one part water creates standard cold brew. One to two gives you something closer to iced coffee. One to three and you're drinking flavored water. Stumptown Coffee built their reputation on getting this math right. The concentrate keeps in the refrigerator for two weeks, which makes it the rare coffee preparation that rewards batch thinking. Make it Sunday, drink it all week.

Cheap coffee makes cheap concentrate. The grind size needs to be consistent, closer to breadcrumbs than powder. Toddy Cold Brew System figured out the filtration decades ago, but any large jar and fine mesh strainer will work. Time does the extraction. Patience does the rest.
